Prawn Balchao Recipe

Ingredients:
500g raw jumbo prawns
1 tsp salt
1 tsp turmeric
6 green chilies, chopped
20g tamarind, soaked in ½ cup water
2 tsp sugar
300g onions, chopped
10cm garlic, finely chopped
8 curry leaves
1 tsp dried prawn powder
4 tbsp oil
For Balchao masala :
1 tsp turmeric powder
20g Kashmiri chilies
¼ tsp cumin
1 inch cinnamon
4 cloves
4 cardamom pods
1 inch ginger
8 garlic cloves
100ml vinegar
Directions:
Grind the spice ingredients to make a fine paste.
Apply 1 tsp salt and 1 tsp turmeric powder to the fish. Allow to marinate for 10 minutes.
Heat the oil on a pan over medium heat. Fry the prawns for about 3-4 minutes and set aside.
Fry the garlic and curry leaves well in the left over oil in the pan.
Add the onions, fry until onions become golden brown.
Add the dried prawn powder, chopped chilies and ground spice and fry for 2 minutes.
Add 2 cups of hot water, sugar and the fried prawns. Bring to a boil, lower heat and simmer for about 10 minutes.
Add the tamarind water and add more salt, sugar, and vinegar to taste if desired.
Cook over low heat for 5 more minutes. Remove from heat and serve with rice.
