200g canned sardines (packed in olive oil)
6 cherry tomatoes, finely diced
2 spring onions, thinly sliced
1 tsp coriander powder
1 tsp cumin powder
1 tsp red chilly powder
2 green chillies, finely diced
1 tsp garam masala powder
1/2 tsp sugar
Salt to taste
1 tbsp olive oil
2 tbsp fresh coriander leaves, chopped
1 cup water
Heat the oil in a pan. Fry the spring onions for 1 minute.
Add the tomatoes, green chillies, chilly powder, and fry for 3 minutes.
Add coriander powder, cumin powder and fry for 2 minutes,
Pour 1 cup water. Add salt, sugar, garam masala and cook on low heat for 5 minutes to thicken the gravy stirring frequently.
Put the sardines along with the oil on a serving dish. Pour the prepared spice mixture on top of the sardines. Garnish with coriander leaves. Serve.
