Burrata Crostinis - 6 ways
4 oz burrata cheese
Half a loaf sour-dough baguette (or French bread), sliced
1 slice prosciutto
1 slice smoked salmon
½ avocado, peeled, sliced
½ peach, sliced, grilled
1 slice tomato, grilled
1 tsp pesto
Salt and black pepper to taste
½ tsp balsamic vinegar, optional
½ tsp extra virgin olive oil, optional
Slice French bread into thin slices.
Grill bread slices about a minute on each side.
For crostini with pesto, burrata, basil: spread one bread slice with pesto and top with burrata and basil.
For crostini with burrata, smoked salmon, dill: spread second bread slice with burrata and top with a slice of smoked salmon and dill.
For crostini with burrata, avocado, salt, pepper, cilantro: spread third bread slice with burrata, add avocado slices and top with salt, pepper and cilantro.
For crostini with burrata, grilled peach, balsamic vinegar: spread fourth bread slice with burrata and top with a grilled peach slice and drizzle with balsamic vinegar.
For crostini w/ith burrata, prosciutto, mint: spread the next bread slice with burrata, top with prosciutto and mint.
For crostini with bread, grilled tomatoes, extra virgin olive oil: Spread the last slice with burrata and top with a slice of grilled tomato. Sprinkle with thinly sliced mint, cilantro, salt, pepper and olive oil.
