Chicken Xacuti

This classic Goan chicken dish has wonderful flavors from the Xacuti spice mix.

Ingredients:
1kg chicken, cut into portion size
50g xacuti masala
1/2 fresh coconut, grated
2 large onions, sliced
2 tomatoes, chopped
5 green chillies, slit lengthwise
6 curry leaves
1/2 tsp sugar
4 tbsp oil
1 tsp salt
1 tbsp ginger paste
1 tbsp garlic paste
1/2 tsp black pepper powder
5 tbsp fresh coriander, chopped
Juice of 1 lime, freshly squeezed
Xacuti spice masala ingredients:
10g turmeric powder
60g chilly powder
10g pepper powder
5g star anise powder
5g nutmeg powder
5g aniseed
5g cinnamon
30g dry coriander powder
5g cumin
5g cloves
2.5g cardamom
40g poppy seeds
Directions:
To make Xacuti spice masala, roast all of the spice ingredients in a frying pan without any oil until fragrant. Take care not to burn any of the spices. Grind the spices and store in an airtight container for later use.
Rinse the chicken pieces and pat dry. Mix 1 teaspoon salt, lime juice, ginger, garlic paste, 2 tablespoons fresh coriander, and black pepper in bowl and apply to the chicken pieces. Set aside and let the chicken marinate until ready to be cooked.
Heat a pan and toast the grated coconut, 1 onion slices and xacuti spices. Remove from pan and grind into a paste.
Heat 2 tablespoons oil in a pan. Fry the remaining onion slices until softened and golden brown.
Add in the curry leaves to the pan. Then mix in the green chillies.
Add the chicken pieces and any remaining liquid to the pan. Cook for 10 minutes uncovered.
Stir in the xacuti masala paste and bring to a boil.
Add the chopped tomatoes, remaining coriander leaves and cook until chicken is tender.
Season with salt and sugar to taste. Serve.
