Pork with Bamboo Shoots

Ingredients:
500g pork
250g bamboo shoots, shredded
2 red chili (hot)
2 medium tomatoes
1 tsp corn flour
4 medium onions
1 tsp ginger paste
1 tsp garlic paste
2 bay leaves
1 tsp turmeric powder
Salt to taste
1 tbsp vinegar
Coriander leaves for garnishing
Directions:
Wash and cut pork into cubes. Marinate the pork in vinegar for 15 minutes.
Chop the onions into big pieces. Slice the tomatoes. Slice the chilies lengthwise. Chop the coriander leaves.
Fry the pork in a saucepan over medium-high heat.
When fat starts oozing from the meat, stir in the onions, ginger and garlic paste, bay leaves, tomato slices, corn flour, salt (as required about 1 1/2 tsp). Stir fry for 10 minutes.
Add the sliced chilies and bamboo shoot. Mix well, cover and cook for 15 minutes sprinkling water as required. Remove from heat, garnish with coriander leaves and serve hot.
