Prawn Biryani Recipe

Ingredients: 
250gms Rice(Basmati)
250gms Prawns
2 Eggs
150ml Vegetable Oil
1 1/2 tsp Sugar
2 Big Onions
1 Green chilly(big), chopped
1tsp Ghee
1tsp Ginger paste
100gms Cashews
100gms Raisins
1 Bunch Coriander (Cilantro)
1 tsp Cardamon powder
2 Bay leaves
1/2 tsp Turmeric powder
3/4 tsp Salt
1 Tomato (big)
Directions: 
Clean and rinse the prawns thoroughly.
Heat oil in a pan on medium-high heat. Fry the prawns in the pan-- till they turn brown. Remove from the pan and keep them separately on a plate.
Cook the rice in a saucepan. The rice grains should be non sticky and separate.
Heat the remaining oil in the pan. Add chopped onion(one), ginger paste, bay leaves, sugar, turmeric, salt. Stir fry till brown, sprinkling water if needed.
Now add the rice, mixed with ghee and cardamom powder, to the mixture in the pan and stir fry for another 5 minutes.
Add the fried prawns, cashew nuts and raisins to the pan and stir fry for 3 minutes.
Make an omelet with the two eggs separately.
Cut omelet into small pieces and mix with rice.
Remove rice biryani from the pan and place on a serving bowl.
Cut remaining onion into round slices and tomato into big pieces.
Garnish biryani with onion slices, tomato pieces, chopped chilly and cilantro.
