Ingredients:
Goat/Lamb meat : 1 kg
Ghee (clarified butter) : 500 gms
Curd (yogurt) : 250 gms
Onion : 250 gms
Ginger : 1 piece( 1'' long)
Bay Leaves : 20
Cinnamon, clove, cardamom : 2 gms
Green chilly : 12
Salt : 1 tsp or as required
Directions:
Rinse and cut ginger, chilly and onion thinly.
Grind the cinnamon, cardamom, clove and mix with curd & salt.
Wash and cut the meat into bite size pieces. Divide the meat into six equal portions.
Take a saucepan, put three bay leaves and place the 1st portion of meat on it. Cover the meat with some curd and ground spice mixture.
Again, put 3 bay leaves on the meat and place the 2nd portion of meat over it. Add curd and spice mixture on the meat.
Repeat this up to the 6th portion- one over the other.
Then brush ghee on all sides of the meat thoroughly. Cover the saucepan with the lid, put some weight on the lid so that vapor does not leak out freely.
Cook on medium low fire for about 1 hr 25 min. or till the meat is done properly, after the water dries up and the ghee rises over the meat.
Stir the meat for 5 minutes and remove from heat. Place the meat on a serving plate and garnish with coriander leaves & sliced tomatoes.
