Grilled Shrimp Tostada w/ Avocado Dressing

Ingredients:
1 pound large raw shrimp, peeled and deveined
1 tsp garlic powder
½ tsp cayenne powder
¼ tsp ground cumin
1 tsp canola oil
Kosher salt to taste
1 cup jicama, diced
1 cup radish, diced
1 cup cucumber, diced
For avocado dressing,
1 ripe avocado, peeled & diced
1 tbsp extra virgin olive oil
4 tbsp fresh lime juice
¼ tsp salt or to taste
¼ tsp ground black pepper
2 tsp jalapenos or serrano, chopped
1 tbsp green onion, minced
1/2 cup chopped cilantro
Store bought corn tostadas
Skewers
Lime wedges (optional)
Directions:
To prepare avocado dressing, put avocado, lime juice, olive oil, jalapeno, green onion, and cilantro in a blender and process until smooth. Add 2-3 tablespoons water to achieve desired consistency and set aside until later.
Mix chopped jicama, radish, cucumber in a bowl and season with salt. Set aside until serving time.
Heat a grill to medium-high.
Combine garlic powder, cayenne, cumin powder and oil in a small bowl. Pour over the shrimp and toss to coat. Sprinkle with salt to taste.
Thread 3-4 shrimp onto each skewer until all shrimp have been used up.
Grill shrimp skewers 2 minutes on each side until browned in spots for a total of 4 minutes.
Remove shrimp from skewers. Top each tostada with 3 shrimp, 1-2 tablespoons jicama, cucumber and radish, and 1 tablespoon avocado dressing. Serve with lime wedges.
