Rice Pudding

A traditional Indian rice pudding recipe that can be served warm or cold and is wonderful both ways.

Ingredients:
150g short grain rice
2 litres milk
200g sugar
10g raisins
10g cashew nuts
5 cardamom pods
2 tbsp coconut chips, finely chopped
Directions:
Soak the rice for 10 minutes. Remove cardamom seeds from the pods.
Bring the milk to a boil in a saucepan. Reduce heat and cook for 7-8 minutes.
Add the soaked rice to the milk. Mix in the cashews, coconut, raisins, sugar and cook until thickened in about 40 minutes. Remove from heat. Serve warm or chilled if desired.
