Egg Muffins with Turkey Bacon

Ingredients:
8 eggs
1 cup diced red bell pepper
1 cup diced mushrooms
1 cup peas (use fresh)
1 tsp chopped chives
Cooked turkey bacon, 12 slices
1/2 tsp salt
Shredded cheese for topping (optional)
Directions:
Preheat oven at 375 degrees F. Beat eggs in a bowl.
Add vegetables to beaten egg mixture. season with salt and pepper.
Spray a 12 cup muffin tin with oil.
Line each muffin cup with turkey bacon one for each muffin.
Fill each muffin cup ¾ full with egg mixture.
Bake for 8-10 minutes or until muffins rise and are cooked through.
Let cool few minutes and serve.
