Asparagus & Mushroom Frittata

Asparagus & Mushroom Frittata Cooking Recipe

Ingredients: 
8 eggs
1 cup asparagus, chopped
2 cups mushrooms, sliced
3/4 cup goat cheese, crumbled
2 tbsp pecorino cheese, grated
1 tsp olive oil
1/2 tsp black pepper
1 tbsp chopped parsley
Pinch salt
Directions: 
Beat together eggs, black pepper, salt and goat cheese in a medium sized bowl
Heat olive oil on a 10-inch non-stick, oven safe pan over medium heat.
Set oven to broil setting and preheat.
Sauté asparagus and mushrooms on the pan for 2-3 minutes.
Add egg mixture to the pan, stir and cook for 4-5 minutes until mixture sets on bottom.
Sprinkle pecorino cheese on top of egg mixture.
Broil in the oven for 2-3 minutes until lightly browned.
Remove from oven and slice into 6 pieces. Serve.
