Taro with Coconut

Taro with Coconut Cooking Recipe

Ingredients: 
250g Taro stalks, trimmed & finely sliced
2 tbsp grated coconut paste
2 medium onions, chopped
1 tsp ground coriander seeds
1 tsp ground black pepper
1 tsp red chilli powder
A pinch turmeric powder
Salt according to taste
2 tbsp vegetable oil
1/2 cup water
Coriander leaves for garnishing
Directions: 
Grind the onions, coriander seeds, black peppercorns and chilli powder into a smooth paste.
Heat the oil in a pan. Put the spice paste in the pan and cook stirring occasionally until lightly browned.
Add the diced taro to the pan. Mix in the coconut paste, turmeric powder and salt.
Cover the pan with a lid and bring to a boil.
Add water and cook stirring occasionally until a thick consistency is reached.
Remove from heat. Garnish with coriander leaves and serve.
