Spicy Spinach Dip

Ingredients:
1 (12 ounce) package frozen chopped spinach or 1 pound fresh spinach, chopped
1 ½ cup small curd cottage cheese
1 cup plain yogurt
½ cup fresh Italian parsley, finely chopped
¼ cup scallions, finely chopped
3 tbsp gochujang (Korean chili paste) or according to taste (substitute with any chili paste of your choice)
Salt to taste
Freshly ground black pepper to taste
Directions:
Boil or steam the spinach leaves. Drain and squeeze out all liquid by using hands or wrapping in paper towels and squeezing.
In a medium bowl, combine the spinach, cottage cheese, yogurt, parsley, scallions, salt, pepper and gochujang paste. Stir until well mixed.
Cover and chill dip in the refrigerator for at least 6-8 hours for the flavors develop. Serve with crackers or vegetable crudités.
