5 slices bread (stale)
3 tbsp vegetable oil
1 big onion, thinly sliced
1 small carrot, diced
½ cup shelled peas
½ cup green beans, diced
1 small tomato, diced
½ cup soy bean nuggets (or substitute with sliced mushroom)
½ tsp salt
2 tbsp shelled peanuts
Chopped fresh coriander (cilantro) leaves for garnishing
Heat the oil in a pan over medium-high heat.
Add the onion slices and fry until browned.
Add the vegetables, soy bean nuggets, peanuts, salt and cook for 4 -5 minutes.
Tear or cut the bread slices into small pieces. Add to the pan and fry stirring for 2-3 minutes.
Remove from heat. Garnish with chopped coriander and serve.
