Teff & Herbs Pancake

Teff is the smallest whole grain in the world and is a staple of traditional Ethiopian cooking. It is used to make everything from bread to beer. This ancient grain has a mild, nutty flavor, unique texture and high nutritional value. It is high in dietary fiber and iron, and provides protein, magnesium, calcium, vitamin B6, zinc etc. Adding teff flour to this whole grain pancake recipe ups its health benefits.

Ingredients:
1 cup teff flour
1 cup whole wheat flour
2 cups milk
2 eggs
½ cup fresh mixed herbs, finely chopped
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt or to taste
Coconut oil or butter for cooking
Directions:
In a bowl, sift together teff and wheat flours, salt, baking powder and soda.
Heat a skillet or griddle over medium-low heat.
Whisk together eggs and milk in a bowl.
Pour in the egg mixture into the flour mixture and stir until just combined together. Do not over mix batter.
Heat oil in the skillet and pour in 3-4 tablespoons batter to make a pancake.
Cook pancake for 2-4 minutes or until bubbles rise to the surface.
Flip pancake over and cook for another minute or so to let that side brown.
Serve pancakes with Greek yogurt, sour cream or coconut cream.
