Chickpea, Tomato & Artichoke Salad

Ingredients:
1 can chickpeas, drained & rinsed
1/2 pint cherry tomatoes, halved
1 cup marinated artichoke hearts, quartered
1 cup broccoli, steamed
1 cup lima beans, steamed
2 tbsp fresh mint leaves, chopped
2 scallions, chopped
Dressing ingredients:
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 tbsp freshly squeezed lemon juice
2 garlic cloves, minced
1 tsp fresh ginger, grated
1/2 tsp freshly ground black pepper
Pinch of cayenne pepper
Salt to taste
Directions:
Put all of the dressing ingredients in a small bowl and whisk well to combine. Set aside.
Combine the chickpeas, tomatoes, artichoke hearts, lima beans, broccoli, mint, and scallions in a large bowl. Drizzle with the dressing and toss to coat. Serve.
