Thai Sticky Sweet Rice with Mangoes

Ingredients:
1 cup sticky rice or sushi rice
1 cup coconut milk
4 tbsp sugar or to taste
1 tsp vanilla extract
Pinch of salt
2 ripe mangoes, peeled & chopped
Mint leaves for garnishing
Directions:
Rinse and place rice in pot and cook according to package directions.
Heat coconut milk in a pan over low heat with sugar, vanilla and salt. Heat until sugar dissolves, do not let the milk boil.
Remove rice from heat, stir in the coconut milk and let stand for 10-20 minutes or until liquid is absorbed.
Serve warm or cold with chopped mango and mint leaves.
