Quinoa Salad with Edamame & Black Beans
2 cups quinoa, cooked
1 cup shelled edamame, cooked
1 cup canned black beans, rinsed
1 cup small red bell pepper, diced
½ cup feta cheese, crumbled
3 tbsp olive oil
1 tbsp balsamic vinegar
Juice of 1 lime
3 cloves garlic, minced
1 tbsp basil, chopped
1 tbsp mint, chopped
Cook quinoa for 12 minutes or according to directions.
Add quinoa, edamame, black beans and bell pepper in a big bowl and mix.
Next fold in the feta cheese into the mixture.
In a small bowl add the olive oil, balsamic vinegar, lime juice, garlic, basil, mint and mix well.
Drizzle and incorporate into quinoa mixture. Serve.
