Pasta with Peas

Pasta with peas….I think after potatoes, peas are the most used “vegetables” ( in truth, peas are a sort of legumes) in the UK. I prefer the petite poise variety and I usually use the frozen ones.
These legumes are tasty, sorry but I don’t like when restaurants present them boiled or steamed without condiment.
To better appreciate this recipe you should use “pasta all’ uovo”, such as tagliolini, lasagnette, strozzapreti, etc …In this case, I used strozzapreti and if you want a vegetarian version you can replace the ham with the green beans cut into small pieces.

Ingredients:
320gr of “pasta all’uovo”
250 gr frozen petite pois or garden peas
1/2 onion
50gr cooked ham (facoltative)
50ml of single cream
Parmigiano
40gr of unsalted butter
salt
Directions:
Peel, wash and chop the onion, reduce the ham into little stripes.
In a large pan, melt the butter and add the chopped onion, stir for 2 minutes.
Add the frozen peas, stir and fry for another 2 minutes. Add the cooked ham.
Cook for 10 minutes on low heat and with the lid stir often. At the same time bring the water to boil, add salt and subsequently the pasta. Cook for the necessary time.
When the peas are ready, with a pimer blend half peas condiment, mix it in the pan with whole peas. Add the single cream.
Drain the pasta, set aside 2/3 spoons of cooking water, and pour it into the pan with the condiment.
Add the Parmigiano, mix quickly and serve.
