Oreo Mint Trifle Parfait
40 min (30 min macerating time)
4 kiwis, chopped
1 ½ cups strawberries, chopped
2 tbsp mint leaves, chopped
2 tbsp plus 1 tbsp whisky
Pinch of sea salt
8 Oreo mint cookies
2 cups low-fat whipped topping
Place chopped kiwis and strawberries in 2 separate bowls. Sprinkle one tablespoon whisky, pinch of salt and mint leaves over each bowl and toss. Cover with plastic wrap and let sit at room temperature for 30 minutes. Keep in refrigerator if you want to macerate for longer.
Crush Oreo cookies on a cutting board with the flat side of a kitchen knife.
Place one crushed Oreo cookie crumble in a wine glass. Sprinkle with a few drops of whisky.
Layer whipped topping over Oreo layer.
Next, layer with macerated kiwis and then strawberries. Repeat layers until filled to the brim and top with kiwis, strawberries and crumbled Oreo.
Fill 3 more wine glasses with the same Oreo-whisky, whipped topping, kiwi and strawberry layering. Serve.
