Jackfruit Seeds w/ Fermented Bamboo Shoots
This a is a protein rich, healthy and delicious dish with jack fruit seeds and fermented bamboo shoots.

8 Jackfruit seeds
2 tbsp bamboo shoots (fermented)
2 tbsp chana dal (split chickpeas)
2 tsp mustard seeds paste
100ml mustard oil
2 green chilly
1 big onion, finely minced
1/2 tsp turmeric powder
Salt to taste
Corinader leaves to garnish
Soak the chana dal for about 4 hours. Grind the soaked dal into a paste.
Remove the flesh from the jackfruit seeds. Put the seeds in a pan with water and cook until softened.
Take out the cooked seeds from the pan and peel off the brown skin. Chop seeds into small pieces. Slit the green chilies lengthwise.
Heat the oil in a pan. Add the onion, mustard paste, turmeric powder and saute for 2 minutes.
Put the jackfruit seeds, dal paste, chilies, bamboo shoot in the pan and stir fry for about 10 minutes sprinkling water (if required to prevent burning) from time to time.
Remove from heat. Garnish with coriander leaves and serve.
