Eel Soup Recipe

This healthy soup made from Eel fish is known to increase level of hemoglobin in the blood and thus considered a very good source of nutrition for anemic people.

Ingredients:
1 eel fish (about 500g)
1/2 inch fresh ginger
10 garlic cloves
1/2 tsp black pepper powder
2 medium onions
1/4 tsp sugar
Salt to taste
A pinch ajinomoto
1 tbsp olive oil
1 tsp turmeric powder
1/2 tsp cardamom, clove, & cinnamon powder
Directions:
Wash and rub the eel fish with salt Circle around the neck with a knife. Skin the fish by pulling the skin down from the cut around the neck using gloved hands. The skin comes off very easily. Chop the head off and discard it. Reserve the the blood. Cut the eel fish into pieces -do not wash.
Finely chop half ginger, 5 cloves of garlic and one onion. Grind the rest of the ginger, garlic and onion into a paste.
Mix turmeric powder, half teaspoon salt, chopped pieces of ginger, onion and garlic with the eel pieces(with blood).
Pressure cook the ingredients in three cups of water for about 15 minutes (until 4-5 whistles).
Remove from heat, allow to cool and decant the liquid.
Take out the cooked eel fish pieces, remove the bones and grate the meat into paste.
Heat oil in a pan over medium high heat. Add the ginger, onion, garlic paste to the pan.
When the paste turns slightly brown, add in the grated fish, and then the decanted liquid. Cook for 5 minutes.
Add pinch of ajinomoto, clove, cardamom, cinnamon powder and sugar. If required add hot water to make about 4 cups of soup. Sprinkle black pepper powder, serve hot.
