Lamb Cooked w/ Tomatoes (Lucknow gosht)

Ingredients:
500g lamb/mutton, cut into cubes
100g ripe tomatoes
2 medium onions
5 cloves garlic
½ tsp ginger paste
½ tsp sesame seeds
1 tsp poppy seed
1 tsp red chilly powder
½ tsp Garam masala
½ tsp sugar
100ml oil
Salt as required
2 cups hot water
Directions:
Rinse the meat and pat dry. Grind the onion and garlic into a paste.
Soak the tomatoes in hot water for 7-8 minutes in a large bowl.
Take out the tomatoes from the bowl and pat dry with a kitchen towel.
Peel the skin off the tomatoes. Mash the tomatoes into a paste.
Toast the poppy seeds and sesame seeds in a pan and grind into powder in a spice grinder or coffee grinder.
Heat the oil in a large saucepan. Add the ginger, garlic, poppy seed paste, chili powder and fry until lightly browned.
Add in the meat, salt and sugar. Stir fry for 10 minutes.
Add 2 cups of hot water and stir. Cover the saucepan and cook for about 15 minutes.
Remove the cover and check if water has dried up. Put in the garam masala and tomato paste. Stir fry on low flame for about 6 minutes.
Remove from heat and garnish with slices of tomato. Serve with rice or naan/roti.
