This is Alton Brown's excellent guacamole recipe.

3 Hass avocados, halved, seeded & peeled
1 lime, juiced
½ medium onion, diced
½ jalapeno pepper, seeded & minced
2 Roma tomatoes, seeded & diced
1 tbsp cilantro, chopped
1 clove garlic, minced
½ tsp kosher salt
½ tsp ground cumin
½ tsp cayenne
Place the scooped avocado and lime juice in a large bowl and toss to coat with lime juice.
Drain the lime juice and reserve for later.
Sprinkle salt, cumin, cayenne on the avocado and mash with a potato masher.
Add the onions, jalapeno, tomatoes, cilantro and garlic to the mashed avocados and fold to combine.
Add 1 tablespoon of the reserved lime juice to the guacamole and let sit for 1 hour at room temperature. Serve with chips.
