Baked Chayote Squash with Cheese

Ingredients:
4 medium chayote squash, peeled & sliced into 1/3-inch rounds
2 medium tomatoes, chopped
1 medium onion, chopped
1 clove garlic, minced
1/4 tsp dried thyme
1/4 tsp dried oregano
Salt to taste
4 ounces Oaxaca style cheese or any cheddar cheese, cut into slices
1 tbsp vegetable oil
Directions:
Preheat oven to 350F.
Heat the oil in large pan on medium-high heat. Cook the chayote squash slices for about 7-8 minutes or until just tender.
Mix the chopped tomatoes, onion, thyme, oregano, garlic, and salt in a bowl and set aside.
Remove the squash slices from the pan. Take 2 slices of squash and make a sandwich with a slice of cheese. Top with a layer of tomato mixture and add a slice of squash over it. Place on a lined sheet pan.
Make sandwiches with the remaining squash slices, cheese and tomatoes and place on the sheet pan.
Bake for about 20 minutes or until squash is tender. Serve warm.
