Goya Champuru (Bitter Melon Stir fry)

Ingredients:
1 Goya (bitter melon)
1/2 to 1 can spam
1 block of firm tofu
1 egg
1 tbsp soy sauce
salt and pepper to taste
Handful of Bonito flakes (optional)
Directions:
Drain tofu and and get rid of excess water (using paper towel). Heat pan with oil on medium heat. Tear of chunks of tofu into heated pan and cook until golden brown. Transfer to plate and set aside
Cut goya (bitter melon) in half and scoop out inner white meat. Slice thinly and set aside.
Cut spam into bit-sized pieces. Beat egg in a separate bowl.
Heat pan with more oil. Add sliced goya and cook for a few minutes on medium to medium-high heat or until slightly softened. Add spam and cook until golden brown. Add tofu and soy sauce and mix.
Push ingredients to the side of the pan and add beaten egg. Scramble the egg and then mix with the rest of the ingredients. Taste and season with salt/pepper as needed.
You can serve as is or with bonito flakes sprinkled on top. Can be eaten on its own or enjoyed with rice!

Notes:
To cut down the bitterness of bitter melon, you can massage sliced goya with salt and let sit for a few minutes.
