Sweet & Sour Red Cabbage

Ingredients:
4 cups red cabbage, shredded
1 cup red onion, sliced
1 sour apple, grated
2 tbsp red wine vinegar
2 tbsp canola oil
1 bay leaf
1 garlic clove, finely minced
1/2 tsp fennel seeds
1 tsp sugar
1/2 cup water
Salt & pepper to taste
Directions:
Heat oil in a large pan over medium-high heat. Saute onion slices for about 5 minutes until tender.
Add in the shredded cabbage, grated apple, garlic, bay leaf, fennel seeds, sugar, salt, pepper, vinegar and water and mix well.
Cover pan and cook over high heat for about 10 minutes . Stir occasionally and pour more water if needed until cabbage is tender and liquid has dried up.
Remove from heat and serve.
