Microwave Chili Recipe

Ingredients:
½ lb ground beef
1 can diced tomatoes
1 can kidney beans, drained & rinsed
1 cup chicken stock
2 shallots, finely sliced
3 cloves garlic, minced
1 tbsp olive oil
½ tsp ground cumin
½ tsp paprika
pinch of chili flakes or chili powder
1 tbsp brown sugar
Greek yogurt or grated cheese, to garnish
Cilantro, to garnish
Directions:
Microwave and brown the crumbled beef in a big microwaveable bowl for 5-7 minutes at medium power with a tablespoon of olive oil. Stir twice and microwave until cooked through.
Stir in the shallots, garlic, spices into the bowl. Microwave on high for 30-40 seconds and let rest for 1 minute.
Then, mix in the beans, tomatoes, chicken stock, brown sugar and combine well.
Cover the bowl with a cling wrap and pierce holes in it for steam to escape. Microwave on high for 2 minutes. Remove cover and stir well. Let rest for 1 minute.
Microwave covered at medium power for 2 minutes. Remove cover and stir well. Let rest for 1 minute.
Place into serving bowls and top with cilantro, Greek yogurt or grated cheese.

Tastes better the next day like all chili.
