Spicy Parsley & Avocado Soup

Ingredients:
2 cups fresh parsley leaves, rinsed
1 avocado, peeled & chopped
1 cucumber, peeled & chopped
2 cups tomatoes, chopped
1 1/2 cups vegetable broth
1 inch fresh ginger, grated
1 clove garlic, minced
1 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tbsp freshly squeezed lemon juice
1/2 - 1 tsp cayenne pepper powder or to taste
Salt & black pepper to taste
Black sesame seeds, for garnishing
Chia seeds, for garnishing
Red pepper flakes, for garnishing
Fresh parsley leaves, for garnishing
Directions:
Place all ingredients in a blender and process until smooth and well blended.
Let chill in the refrigerator for at least 2 hours before serving. Serve in bowls garnished with sesame seeds, chia seeds, pepper flakes and parsley leaves.
