A soothing and very refreshing soup for warm summer days.

1 small watermelon, peeled & diced
3 ripe tomatoes, chopped
2 cloves garlic, minced
3 tbsp lemon juice
Salt to taste (optional)
Extra virgin olive oil for garnishing
Cilantro leaves for garnishing
Ice cubes (optional)
Place roughly chopped watermelon, tomatoes, garlic, lemon juice in a food processor. Process until smooth.
Chill in the refrigerator for at least an hour. Serve in bowls garnished with olive oil and cilantro. Add ice cubes if desired.
