Peas : 200 gm
Carrot: 1 large
Cauliflower :150 gm
Green chillies :5
Ginger paste :2 tsp
Oil : 50 ml
Salt as required
Peel and quarter potatoes. Wash and cut cauliflowers into flowerettes . Peel carrots and cut into 1" piece. Shell peas. Peel and slice onion. Grate or make paste of ginger.
Grate coconut. Add hot water. Let it stand till cool. Prepare two extractions one thick and the other thin. The mixture should be run in mixer/ liquidizer to get good result. Strain the first extract, i.e., the thicker one. For the second extraction, add water to coconut and follow the procedure.
Heat oil. Saute onion, green chilies and ginger till onion is tender. Add turmeric powder and potatoes. Saute for a few minutes.
Add second extraction and cook till 3/4 th done adding salt to it. Put in the carrot, cauliflower and peas. Cook for few minutes. Add the first extraction and simmer. Add chopped tomatoes. Adjust seasonings.
1st extraction ( thick) : 1 cup 2nd extraction (thin) : 2 to 3 cups
