Spicy Mini Meat Loaves

Ingredients:
1 tbsp extra-virgin olive oil
1/2 cup finely chopped onion
½ tsp dried thyme
½ dried oregano
½ tsp salt
Freshly ground black pepper to taste
2 tbsp Gochujang
1/3 cup chicken stock or broth
1lb lean (80%) ground beef
1 cup plain bread crumbs
2 eggs, beaten
½ - 1 cup Sriracha or as needed
1 cup milk
Directions:
Preheat the oven to 350 degrees F.
Heat the olive oil in a pan. Add the onion, oregano, thyme, black pepper, salt and cook over medium-low heat for about 8 to 10 minutes, stirring occasionally.
Turn off the heat. Add the Gochujang and chicken stock and mix thoroughly.
In a large bowl, mix the ground meat, onion mixture, bread crumbs, milk and eggs. Combine until just mixed.
Scoop spoonfuls of the mixture and shape into mini meat loaves.
Place meat loaves on a sheet pan lined with parchment paper.
Brush tops of meat loaves with half of the Sriracha sauce. Bake for 40 minutes.
Remove from oven and brush tops of meat loaves with the remaining Sriracha sauce.
Bake an additional 15 to 20 minutes. Remove from oven and cool slightly. Serve with more Sriracha sauce if desired.
