Soy Nuggets with Spinach

Ingredients:
100g soy nuggets, small cubes
250g spinach, chopped
1 tsp cumin seeds
1 ½ tsp coriander powder
2 tsp black pepper
2 dry red chillies, whole
1 tsp garam masala
1 tomato, chopped
1 tsp freshly grated ginger
1 big onion, finely chopped
2 tbsp ghee or oil
2 tsp black pepper powder
1 tsp salt
½ tsp turmeric
Directions:
Boil the soy nuggets in a small saucepan for 5-6 minutes until they become soft.
Remove nuggets from the pan and discard the water. Set aside to cool.
Heat the ghee in a medium saucepan. Add cumin and red chillies and fry for 1 minute. Remove red chilies from oil.
Add onion and ginger and fry for 1 minute.
Add the soy nuggets, salt, turmeric and black pepper. Cook for 5 minutes.
Add the chopped tomato and cook for 7-8 minutes until softened.
Stir in the chopped spinach and sprinkle with a little water. Cook for 5 minutes.
Add the garam masala and when the mixture thickens remove from heat.
Garnish with coriander leaves and serve.
