Microwave Mac 'n' Cheese w/ 3 Cheeses

Ingredients:
1 ½ cups whole wheat elbow macaroni
1 cup sharp cheddar cheese, shredded
1 cup Gruyere, grated
2 cups milk
1/2 cup feta cheese
1 ½ cup artichoke hearts, steamed or jarred and chopped or other vegetables of choice
1 tbsp Dijon mustard
1 tbsp sage leaves, chopped
1/4 tsp salt
Dash of black pepper
Directions:
Add macaroni, 1 cup milk and salt to a microwave safe big bowl.
Cover bowl tightly with plastic wrap and poke a small hole in the middle of the wrap for steam to escape.
Microwave the ingredients on high for 4 minutes. Then remove the cover carefully and stir.
Cover the bowl and microwave on high for 90 seconds more.
Remove bowl carefully from microwave. Add rest of the ingredients to the bowl and mix will.
Cover bowl and microwave on high for 4 more minutes.
Uncover bowl carefully and stir mixture until mixed well.
For any cheese still not melted, microwave in 30 second increments until completely melted. Let mixture sit in microwave for 1-2 minutes. Remove bowl from microwave. Serve.

Notes:
Recipe times may vary according to the wattage of your Microwave. This was tested on a 1,100 watts microwave.
You can try different cheeses for this dish. For toppings, use scallions, Parmesan cheese, bread crumbs, bacon, Gorgonzola, caramelized onions etc.
