Orange & Matcha Pancakes
2 cups gluten free all purpose flour (substitute with regular all purpose flour)
¼ cup sugar
1 tbsp matcha green tea powder
1 tbsp orange zest
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup buttermilk
1 cup orange juice
2 large eggs
1 tsp vanilla extract
3 tbsp coconut oil (substitute with melted butter)
Coconut oil or butter for cooking
Place the flour, sugar, matcha powder, baking powder, baking soda, salt and orange zest in a large bowl and whisk until combined well.
Crack the eggs into a small bowl and whisk them.
Add the buttermilk, orange juice, vanilla extract and whisk to mix. Stir in the coconut oil.
Pour the wet mixture into the dry mixture and mix to combine well. Set aside to rest for 10 minutes.
Preheat a skillet and grease with coconut oil or butter.
Pour 1/3 cup pancake batter on the pan. Cook for 2-3 minutes or until bubbles rise to the surface.
Flip pancake over and cook for another 1-2 minutes to let that side brown.
Cook up rest of the pancakes until batter is used up.
Serve warm with maple syrup or honey.
