Greek Yogurt Dressing w/ Spiralized Vegetable Noodles

Ingredients:
1 cup low fat Greek yogurt
2 tbsp rice vinegar
2 tbsp olive oil
½ cup chopped dill
½ cup chopped parsley
1 small clove garlic
1 small jalapeno pepper
½ tsp salt
½ tsp black pepper powder
2 tbsp water
For spiralized vegetables:
1 beet
1 yellow squash
1 medium carrot
1 zucchini
Directions:
For dressing, place all ingredients in a food processor and blend until mixed thoroughly.
Let chill in refrigerator for an hour or so.
Spiralze the vegetables and mix together in a bowl.
Serve with yogurt dressing on the side.
