Piquillo Peppers Stuffed W/ Tuna

Pimiento del piquillo rellenos is a traditional pintxo recipe from Spain. Pintxos refers to individual snacks spiked with a toothpick or skewer to hold the ingredients together.

Ingredients:
1 onion, diced
1 green pepper, diced
6 piquillo peppers (for the sauté), drained from a jar
130g oil-packed bonito tuna
200g crushed tomatoes
6 to 10 piquillo peppers, drained from a jar
Olive oil as needed
6 to 10 toasted bread slices
Salt to taste
Directions:
Dice the onion, green pepper and 6 piquillo peppers. Snip the tuna with scissors.
Heat olive oil in a pan. Sauté the green pepper, onion and piquillo peppers until they are almost cooked through.
Pour in the crushed tomatoes to the pan and mix in the tuna. Cook for about 15-20 minutes. Season with salt.
Meanwhile, drain 6-10 piquillo peppers from a jar.
Fill each pepper with the tuna mixture.
Place each stuffed pepper on a slice of toasted bread.
Top each pepper with an anchovy and olive spiked through with a toothpick. Serve.
