Nepalese Potato Stew

This is a delicious and spicy traditional Nepalese potato stew or "Aloo Dum" in a tomato based sauce.

Ingredients:
6-7 potatoes, boiled
1 tsp nigella seeds
1 big onion, chopped & ground into paste
1 tbsp garlic paste
3 tbsp chili powder, mixed with 1 cup water
5 medium tomatoes, finely diced & crushed
100 ml oil
1/2 tsp salt
Directions:
Heat the oil in a medium sauce pan. Fry the potatoes for about 3 minutes until lightly browned. Remove potatoes from pan and set aside.
Add nigella seeds in the remaining oil in the pan.
Then add the onion and garlic paste and cook for 1 minute.
Add tomatoes and cook for 4 minutes. Mash tomatoes with a ladle until well mixed.
Add chili powder water and stir to mix.
Add the potatoes in the mixture.
Cook mixture until the liquid dries up and thickens in about 7-8 minutes.
Remove from heat and serve with rice or any flat bread.
