Fish Egg Fritters

These delicious and crispy fish egg fritters are a traditional Indian snack.

Ingredients:
250g fish eggs
50g chickpea flour (besan)
1 medium onion
1/2 inch fresh ginger
1 green chilly
Juice of 1 freshly squeezed lemon
100ml oil
1/4 tsp sugar
1/4 tsp turmeric powder
1 tsp salt or as needed
1/2 tsp black pepper powder
Directions:
Peel the ginger and onion and mince them finely. Chop the chilly finely.
Mix ginger, onion, chilly with lemon juice in a bowl and let rest for 10 minutes.
Mix the chickpea flour with the fish eggs and the ginger onion mixture thoroughly.
Heat the oil in a large pan. Put scoops of the egg mixture in the pan and fry until browned. Fry the fritters a few at a time so that the pan is not over crowded.
Remove fritters from pan. Sprinkle with black pepper and serve warm.
