Fenugreek Leaves w/ Brinjal
1 medium brinjal (eggplant), diced
2 bunches Fenugreek leaves, chopped
1 medium tomato, chopped
1 onion, chopped
5 garlic cloves, crushed
1 red dried red chilly
Turmeric and salt as required
1 tbsp oil
Grind the onion into a paste.
Break red chilly into into 4 pieces.
Heat the oil in a large pan. Add the chilly pieces and garlic in the pan and cook for a few seconds.
Add onion paste and fry for 1 minute.
Add brinjal, tomato, fenugreek leaves to the pan.
Sprinkle with turmeric and salt. Stir and fry for 2 minutes.
Cover the pan and cook for 3- 4 minutes.
Remove the cover, stir and cook for 3 minutes.
Remove from heat and serve as a side dish.
