Chocolate Mint Raspberry Panini

Ingredients:
8 slices sourdough or crusty bread
8 tbsp semi-sweet chocolate chips
1 cup raspberries, plus more for garnishing
2 tbsp butter, melted
4 tbsp fresh mint, chopped
Cinnamon powder for dusting (optional)
Directions:
Preheat a Panini Griddler to medium.
Rub butter on one side of each bread.
Put 4 slices bread on grill with buttered side down.
Place 2 tablespoons chocolate chips on each bread slice. Top with raspberries and then 1 tablespoon mint leaves. Divide raspberries evenly among the bread slices.
Place the left over bread slices on top with the buttered side facing up.
Place each panini on the grill and close the griddler top and press down for 15-20 seconds. Grill for about 5 minutes until chocolate chips melt and the top turns golden brown and crispy
Remove panini from the grill and cut them up into two pieces if desired. Dust with cinnamon powder and serve with more raspberries and mint leaves if desired.
