Chocolate Coconut Rum Balls

This recipe is a healthy twist on the classic Rum Balls.

Ingredients:
1 cup semisweet chocolate chips, melted
2 cups shredded unsweetened coconut plus extra for coating
1/2 - 1/3 cup confectioners’ sugar
1/2 cup creamy almond butter
1/4 cup rum or to taste
2 tbsp honey
2 tbsp cocoa powder
Directions:
Mix all of the ingredients in a large bowl.
Combine thoroughly to form a firm dough.
Shape into small balls. Roll in shredded coconut to coat.evenly.
Serve. Store any remaining in an airtight container.
