Cashew Chicken Curry

Ingredients:
500g chicken, cut into portion size
100g cashew nuts
25g garam masala powder
50g raisins
100g plain curd (yogurt)
2 medium onions
6 cloves garlic, chopped
1/2 inch fresh ginger, chopped
2 green chilies, chopped
2 bay leaves
1/2 tsp sugar
Salt to taste
100ml vegetable oil
Directions:
Soak cashew nuts in water for 1 hour. Grind the soaked cashews into a paste.
Whisk the yogurt until smooth and set aside.
Make a paste of the chopped ginger, garlic, and green chilies.
Grind the onions into a paste and set aside.
Boil the chicken with 2 cups of water in a covered saucepan for about 20 minutes.
Strain the water from the chicken and save about 1 cup until later.
Heat the oil in a sauce pan on medium high heat.
Add the onion paste to the pan. Stir and cook until browned.
Add the spice paste and garam masala to the pan and saute until fragrant.
Pour the saved cup of chicken broth into the pan along with the yogurt and stir to combine.
When the mixture starts to simmer in about 5 minutes, add the chicken and boil for another 7 minutes.
Add the raisins, cashew paste, salt, sugar, and bay leaves. Remove from heat after two minutes. Serve with rice.
