Fiesta Shrimp Tacos

Ingredients:
1 pound raw shrimp, deveined
2 tbsp olive oil
½ jar salsa
½ cup green onion, sliced
½ cup sweet corn
4 cups shredded lettuce
1 cup tomatoes, diced
1 small onion, diced
4 tbsp cilantro, chopped
8 ounces sour cream
2 tsp taco seasoning or to taste
Salt to taste
Corn or flour tortillas, warmed for serving
Lime wedges
Directions:
Combine the chopped tomatoes, onion, cilantro with a little olive oil in a small bowl. Season with salt and set aside. Mix sour cream with 2 teaspoons taco seasoning in a small bowl and let sit in the fridge until serving time.
Heat olive oil in a large pan over medium-high heat.
Add shrimp to the pan and cook for 3-4 minutes until shrimp turns opaque.
Stir in the green onions, sweet corn kernels and cook for 2 more minutes.
Pour the salsa in the pan and stir to combine well. Cook for an additional 2 minutes or until heated through. Remove pan from heat.
To serve, place 2 warmed tortillas on a plate for each taco and top with shredded lettuce and tomato mixture. Add 3-4 shrimp on top and drizzle with dollops of sour cream.. Serve with lime wedges.
