Gluten Free Gingerbread Chocolate Chip Cookies

Gluten Free Gingerbread Chocolate Chip Cookies Baking Recipe

Ingredients: 
1 cup oat flour
¼ cup coconut flour
½ tsp baking soda
1 stick (8 tbsp) butter, softened
1 egg
½ cup sugar
½ cup dark brown sugar
1 tbsp freshly grated ginger
2 tsp ginger powder
1 ¼ tsp cinnamon powder
½ tsp nutmeg powder
¼ tsp ground cloves
1 cup dark chocolate chips
Directions: 
Preheat oven to 375F.
Blend the butter and sugar in a medium bowl until fluffy and smooth.
Beat in the egg and spices until well combined.
In a separate bowl, mix the flours and baking soda.
Stir flour mixture into the butter mixture. Mix until well blended.
Fold in the chocolate chips.
Grease cookie sheets. Drop cookie dough a spoonful at a time on the cookie sheets spacing them 2 inches apart as cookies will spread when baking.
Bake cookies one tray at a time for 8 to 12 minutes or until the cookie edges turn brown.
Remove cookie sheet from the oven and allow cookies to cool for 2 minutes. Transfer cookies to cooling rack.
Bake rest of the cookies one cookie sheet at a time if possible, until they are all baked.
Cool and store in airtight containers.
