Ingredients:
500g bottle gourd (lauki)
500ml milk
50g coconut chips
10g raisins
10g cashew nuts
1 tsp semolina
150g sugar
Directions:
Soak the semolina in water for about 5 minutes.
Peel, deseed and dice the bottle gourd into small pieces.
Boil bottle gourd with 250ml water in a saucepan for about 10 minutes.
Drain the water and set the half cooked bottle gourd aside.
Heat the milk in a large saucepan. Add the bottle gourd, sugar, semolina and boil for 15-20 minutes on low heat stirring constantly until the bottle gourd melts.
Add the raisins, cashews, coconut as soon as the milk thickens and remove from heat. Serve warm or cold.
