Persian Dill & Lima Bean Rice (Baghali Polo)

Persian Dill & Lima Bean Rice (Baghali Polo) Cooking Recipe

Ingredients: 
2 cups long grained basmati rice
2 cups cooked lima or fava beans
1 cup fresh dill, chopped or 1/4 cup dried dill
2 tbsp butter
2 tbsp olive oil
2 tsp salt
1/2 tsp garlic powder
3 cups water
Directions: 
Place the rice, olive oil, salt and water in a large pot over high heat.
Cover the pot and bring to a boil. Remove cover and cook uncovered until water evaporates and rice is half done.
Reduce heat to low. Stir in the dill and garlic powder.
Place the lima beans over the rice and cook covered for about 15 minutes until rice is cooked.
Remove from heat and add the butter over the rice. Set aside for 3-4 minutes until butter melts. Serve warm with any meat or fish dish.
