Ingredients:
8 oz. ground turkey
1 (10 oz) package frozen chopped spinach, thawed & squeezed dry with paper towels
8 eggs, lightly beaten
¼ cup Parmesan cheese, grated
2 tbsp olive oil
5 cloves garlic, minced
1 medium onion, finely chopped
Salt and freshly ground pepper to taste
Directions:
Heat olive oil in a large pan over medium-high heat.
Cook onion and garlic for 5 minutes or until softened.
Stir in ground turkey and cook for around 10 minutes until nicely browned.
Mix in spinach thoroughly and cook for 2 another minutes.
Pour eggs into the pan and cook for about 4 minutes until mixture is slightly dry.
Season the mixture with salt and freshly ground black pepper to taste.
Sprinkle Parmesan cheese on the turkey scramble. Serve with crusty bread.
