Chopped Salad

Chopped Salad Recipe
Prep Time: 
15 minutes
Ingredients: 
2 romaine lettuce
1 medium cucumber, diced
1 red bell pepper, diced
1 can garbanzo beans, rinsed
1 bunch red radishes, diced
2 tbsp chopped scallions
½ cup feta cheese, crumbled
½ cup sunflower seeds
3 tbsp extra virgin olive oil
1 tbsp sherry vinegar
1 tsp raw honey
1 tsp Dijon mustard
½ tsp dry thyme
Salt & pepper to taste
Directions: 
Mix extra virgin olive oil, sherry vinegar, honey, mustard, thyme, salt and pepper in a small bowl and set dressing aside.
Rinse lettuce and pat dry. Chop into bite sized pieces and set aside.
Chop and combine rest of the ingredients in a large salad bowl.
Drizzle the dressing over the salad and toss to coat.
Add in the chopped lettuce and toss gently to combine. Serve.
