Mediterranean-style Sardine Rice Bake Recipe

Ingredients: 
6 cups cooked long grain rice
1 cup artichoke hearts, chopped
1/2 cup red peppers in oil, chopped
2 cups asparagus, blanched
6 ounces crumbled feta cheese, divided
4 cans sardines, drained
3 tbsp extra virgin olive oil
2 tbsp red wine vinegar
3 tbsp fresh parsley, chopped plus more for garnishing
1 tsp salt
½ tsp black pepper
Directions: 
½ tsp black pepper
Mix all ingredients with 3 ounces feta cheese in a large bowl.
Spread the mixture into a large casserole dish and top with the remaining feta cheese.
Bake for 15-20 minutes or until the cheese begins to browns.
Remove from oven. Garnish with parsley and serve warm.
